Hoisin-Glazed Pork Tenderloin

    Adjust rack to the middle position (middle and top for 4 servings) and preheat oven to 450 degrees. Wash and dry all produce. Trim and thinly slice scallions , separating whites from greens. Trim green beans if necessary. In a small microwave-safe bowl , combine hoisin sauce , ¼ garlic powder (use 1/2 for 4), and careful 1 TB spoon of water (2 for 4). Microwave until just warm, ⏱️ 30 seconds .

    In a small soup pot, heat a drizzle of vegetable oil over medium-high. Sauté the scallion whites until softened, ⏱️ 1 minute . Add jasmine rice and ¾ cup water (1⅓ cups for 4 for 4) and a generous pinch of salt . Heat to a boil, cover fully, and reduce to a simmer. Cook until rice is tender, ⏱️ 15-18 minutes . Keep covered and off the heat until ready to serve.

    While the rice cooks, pat pork tenderloin dry with paper towels, then season all over with the pepper . Heat a drizzle of oil in a large pan over medium-high. Sear the pork, rotating and turning until browned, 4-8 minutes. Set it to one side of a lined baking sheet , and the green beans go on the other side.

    Toss the green beans on that sheet with another drizzle of oil, salt, and pepper . Roast them with the pork on the middle rack until both are cooked, 10-12 minutes. In the last 3-5 minutes, spoon half the hoisin sauce over the pork as a glaze, saving the rest for serving. Return to the oven until the pork is sticky. Once done, slice the pork across after resting a minimum of 5 minutes.

    While that cooks, make the spicy mayo. In a second small bowl , mix together mayonnaise , the remaining garlic powder , and sriracha . Add a splash of water, a teaspoon at a time, until it drizzles smoothly.

    Fluff the rice with a fork and stir in 2 tablespoons of butter. Toss the beans with the lense and half of the sesame seeds . Divide rice, pork, and beans among plates. Drizzle everything with the rest of the hoisin glaze and as much of the mayo as you want; finish with scallion greens and the seeds that are left. Serve.
